NEW ULM, Minn. -- As you walk through the door of Lola: An American Bistro, you are either presented with the smell of freshly baked goods and coffee, or some of the best menu items you will ever try in Southern Minnesota. 

Owner Lacey Lueth was a chef at the Neighbor's Italian Bistro, until she decided it was time for a change.  

"I had been in the restaurant business for about, at the time, 10 years," said Lueth.

" And decided it was time to try my own venture."
The New Ulm restaurant exuded a very relaxed and casual atmosphere. Its interior design gave off feelings of a family style restaurant and a coffeehouse.

However the restaurant does not stop there, they wanted to extend their "awesomeness" a step further, with their very own food truck.
"The food truck is in Mankato, usually Wednesdays and Fridays from 11- 2," said Lueth. " We also do private events, we do music festivals, so we're on the road a lot, going to different places."
The restaurant has many "scratch- baked" goods and eclectic menu options, so it is not surprising that they want to share their food. 

Employee Josh Robertson said he loves everything about his place of work, from his co- workers to the environment, but the food is what keeps him there.  
"The food we serve it's beautiful, and delicious, so it's a deadly combo I guess," said Robertson. 

Lueth brought out Seared Salmon Salad, Pork Banh mi with Rosemary Garlic Fries, Chicken Pot Pie and Spaghetti Fresca. 

Each dish has something that makes it stand out from the rest, but there's only one item, that has staff expressing their love on a t-shirt. 
"Oh pot pie," said Robertson. 

"I love pot pie!"
