• 2 medium avocados
  • 2 tsp lemon juice
  • 1 pint cherry tomatoes
  • 1/4 medium Vidalia onion; chopped
  • 3 tbsp rice vinegar
  • 1 tbsp olive oil
  • Salt and pepper to taste

Peel and pit avocados. Cut into small chunks and sprinkle with lemon juice. Wash tomatoes and cut each in half. Add tomatoes and onion to the avocado. Add vinegar, oil, salt and pepper. Stir well. Chill and serve.
